Sweet Yellow Curry

Yellow Curry with Basil

We had some great Thai take out from Sweet Basil Thai & Sushi, when we stopped in Ceder City, UT. The great flavors stuck with us, and Aaron and I both wanted Thai when we got home, so I whipped this up yesterday…and now you can too.

First, you’ll need to head to your local asian market and pick up some Yellow Curry paste, 1 can of coconut milk, fish sauce & Sweet Basil Leaves.

You will also need, 4 carrots, 2 medium sized red potatoes, 1/2 yellow onion, 2T of sugar and 1 1/2cups of chopped cooked chicken (or meat of your choice).  Dice all of your vegetables.

Place vegetables in a pot of boiling water for 7-10min, or until potatoes are tender.  Drain and set aside.  Pour coconut milk and curry paste into a large pot on medium heat.  Stir to combine.  Add 2 Tablespoons of both Fish Sauce and Sugar.  Add chicken and vegetables, mix well.  Chop up 1/2 cup of the basil leaves and add them to the curry mixture right before you serve.

Serve over rice, with chopsticks or a fork!

There is a bit of a bite to it- but its not too spicy at all.  It was really really good!  This recipe makes enough for 4 or 5 servings (hello leftovers!!!).

    We’ve discovered the canned curry too! I buy it in a larger plastic container and keep what I don’t use in the freezer. It scoops out easily and is there when I need it. Try it with eggplant or squash. So yummy. BTW we have basil coming out our ears, let me know if you want some.
