Pink Cookies

There are few things that pink frosted cookies can’t solve…if nothing else they will bring a smile to your face .  Whip out your KitchenAid, Bosch, Cuisinart or whatever it is you have and make these cookies!  You won’t be sorry (especially if you share them with your neighbors…they will thank you and so will your thighs!).

I searched all over the interwebs to find a sugar cookie recipe that tasted like the yummy store bought Lofthouse Cookies (you know the ones!).  This is the recipe I tried, however, I’ve noted the changes I will make next time I use the recipe.  This recipe makes 3-4 dozen cookies, these rise really well, expect your cookies to be almost 1/2″thick.

1/2c butter
1c sugar (add 1/4c more)
2 eggs + 1 yolk
1/2t vanilla (add 1/2t more)
1/2t baking powder
1/2t baking soda
add 1/2t salt
3/4c sour cream (reduce to 1/2c)
3c flour (add 1/2c more, or more to get consistency right)

Cream butter and sugar.  Beat in eggs, sour cream, and vanilla.  Mix dry ingredients in a separate bowl, and slowly add to wet mixture.  Adding more flour as needed.  Refrigerate if your dough is too soft to roll and shape.  Roll out to 1/4″ thick and use cookie cutters.  Bake for 8min at 425f.  Cool on wire rack before frosting.

For Frosting:
1/2c butter at room temperature.
1t vanilla
1/4c heavy whipping cream
1/2lb or so of Powdered Sugar

Beat butter and vanilla until smooth.  Add 1cup of powdered sugar at a time- be sure to beat it really well.  After 3 or so cups of sugar add 1/2 of the whipping cream.  Continue adding powdered sugar/whipping cream until the desired texture is reached.  Add food coloring and have some fun!

    Heather,
    I had a valentine party for my daughter and some of her friends and we made these cookies and some cupcakes for them to decorate. Can I just say that these cookies are FABULOUS! I made them thursday night and there were some left by Monday and they were still soft. My hubby is very picky when it comes to sugar cookies and he kept sneeking them before the party.
    I am going to make so more this week because they turn out so pretty frosted with sprinkles.
