Oh, yes I did.

My friend Jaylee is going to read this and die that I went to so much trouble for an average Thursday night dinner.

I’ve been a bit less than pleasant as of late…grouchy some might say.  Maybe I was trying to make up for it, or maybe it was the two vintage aprons I ironed and photographed today.  Or, maybe it was the gajillion mile and hour winds ripping through town.  I don’t know my justification, but I ended up putting a lot of effort into a mundane thursday dinner.

Meatloaf, mashed potatoes (from scratch) and green beans.  With strawberry shortcake (from scratch with real whipped cream).

The meatloaf was SO good I just have to share, even the kids ate it.

1 egg
1/2 medium onion diced
3/4c bread crumbs
1/4c milk
1 can mushroom pieces (drained)
1/4c blue cheese crumbles
1t salt
1lb ground beef

Mix it all together and smoosh into a standard loaf pan, bake for 45-50min. at 350.  The blue cheese was a last minute choice and SO worth it!  Next time I think I’ll add a little dijion mustard!

    Just bought the ingredients yesterday for meatloaf and I think I will try this recipe. It will be a hopefully more than mundane Friday for us around here!

    It looks delish, and I love the table cloth. I think it’s the homemade whipped cream that puts me over the edge. At least the strawberries aren’t from your garden and you didn’t pasteurize your own cheese.

    When I make meatloaf I do everything like that too but I usually don’t make dessert and if I do, it is something simple like cookies I have been craving. I think I need to make a nice dinner tonight to help me get out of my mood (why does cooking help?). I think maybe I will make stuffed peppers and then the leftover filling can be burritos tomorrow night (Saturdays I usually don’t have time to cook dinner, which is interesting because Bryan is home all day).

    I like the table cloth – I would have had it cut up into 3-4 projects, but it looks great on your table.
