Easy Peasy Vegetarian Dinner

Vegetarian Dinner

Perfect easy weekend meal.  Boil some pasta, steam a couple of heads of broccoli, mix in a few tablespoons of olive oil, some minced garlic, just a tiny bit of red pepper flakes and top with shredded ramono cheese!  I served it tonight with a side of fresh berries.

What is your favorite easy peasy dinner?

p.s. oh, and I tweaked Alice and remade her in red.

    Oh I LOVE the red one and I am generally not a red person but I am finding that I am enjoying red more often than not these days.

    My easy meal is pasta pizza or quesadillas (sometimes if we have leftover chicken we have chicken quesadillas).

    This sounds like a variation of a dish that we make, except we use basil instead of pepper flakes and sprinkle lemon juice on top for a nice kick :) Either way I agree, this dish is so simple yet so delicious!

    I got a recipe very similar to this from Everyday Food. They suggest cooking the broccoli in with the pasta – saves dirtying a pot! Also, I add some lemon juice if I have it. We just had this the other night – yum yum.

    This meal could easily become a favorite at my house. I love pasta but my kids don’t care for it with a marinara sauce, or really any sauces. They LOVE broccoli and tossing it with hardly anything would make my kids possibly like it more…

    homemade skillet pizza dough that I freeze ahead of time, then we just top them and pop them in the oven…….great for those days when extra kids come over….and MUCH better than delivery…at least my kids say so. BTW, the recipe is on my blog if you are interested….
