creativity in the kitchen
As I have said before, most of the time cooking is a chore. On long Sunday afternoon’s however I love to get dirty in the kitchen. Somewhat reluctantly I cook dinner every night, chore or not we have to eat. My husband is always telling me I make “fancy food” and he wants more “normal” food, whatever the heck that is.
I’m simply at a loss on what sorts of “normal” meals I should cook. What is it that the average amercian family eats these days (especially while battling rising food costs)? I have tried those recipe chain letters and no one ever sends recipes back (I don’t blame them, I hate chain letters too). So, I am begging you to comment and tell me some of the meals that are in your regular rotation.
To play fair, here is what we have eaten the last few days (which I don’t think is fancy at all!).
- Tonkatsu & Rice (a Japaneses dish that my husband cooks)
- chicken enchiladas & beans
- Salmon, veggies & rice
- Mc Donalds
- Rositas (local mexican place)
- Irish-Italian Spaghetti
- Fish Sticks (oh, yes, we ate these with the kids-blech!)

Things we have eaten lately? umm…
Easy Italian Stew (it really is easy and my boys- and husband LOVE it)
lasagna
taco soup
roast and mashed potatoes
burritos (using the leftover roast)
meat loaf (recipe I got from Ann because I never really liked it before) and baked potatoes
carrot chowder
chicken enchiladas (a recipe I made-up because Bryan prefers red sauce)

I never know what to make for dinner either.

Homemade Mac and cheese
Spaghetti
chicken and vegetable teriyaki with rice
Beef stew with fresh bread
Pork Chops, Mashed potatoes, Green Beans
Black beans and rice
Baked chicken legs and mashed potatoes and broccoli
Homemade pizza
Scrambled eggs, toast and fruit smoothies

Hmm. This week:
fried rice
lasagna
burritos
banana bread (it’s a meal to a 1 yo!)
mac & cheese
tilapia with this amazing citrus sauce AJ made up, with rice & steamed veggies on the side
We’re really looking forward to our garden coming in.

One of my favs this time of year is kabobs: steak cubes tomatoes, green peppers and canned whole potatoes: covered in barbecue sauce and thrown on the grill. I usually make a dish of rice to go with it. Love cooking on the grill in nice weather. I’m not much of one for cooking as it takes away from crafting time… Ü

Have you heard of chicken rollups? If not, e-mail me for the recipe. Clint grew up on them. I also have a super easy, but slightly more gourmet version of shepherds pie.

quick & easy meals:
king ranch chicken casserole (super easy, and even quicker and easier if you buy a rotiserrie chicken and use meat from that)
lasagne (find a recipe where you don’t have to cook the noodles first)

Homemade Chili
My Lasagna (my go to meal I love making it after work it relaxes me)
Shrimp Stir-Fry
40 clove garlic chicken with garlic mashed potatoes and garlic bread (You did not want to smell our breath for the next few days)
Your meals sound fairly normal.

My no-brainer meals are usually Mexicanish: taco salad, burritos, fajitas, chili, etc. Other things we eat a lot are teriaki chicken & broccoli, lasagna & spagetti. Oh, and pizza. I love pizza!
