Chicken, its what’s for dinner
Thursday afternoon I showed up at a friends house with lunch fixings and a lemon layer cake. Her husband had been out of town for a long time- all she had to keep her entertained were little people. I suspected some adult time would be appreciated, I’m sure lunch and cake didn’t hurt either. We had a nice lunch together, and she sent me home with a whole fryer chicken. Which I very much appreciated, and cooked for my family tonight.
Roast Chicken-
Rinse chicken and remove innards. Sprinkle liberally with salt and pepper. I stuffed the cavity with fresh basil and chopped shallots. I also stuck some basil under the skin on the chicken breasts (oh here come the google searches!). Bake at 375 for 1 hour, or until meat thermometer reads 160.
Orange Mashed Potatoes-
3 large red potatoes and 1/2 a yam peeled, chopped and boiled to tender. Add all potatoes to a mixer, add 1/2c of sour cream (a little dairy doesn’t seem to bother me too much), and a teaspoon or 2 of seasoning salt. Blend until smooth.
Veggies-
chop whatever veggies you have and saute them in butter and salt.
We finished dinner off with these. Thanks again Jaylee for the chicken! When I told the kids it was from you, they panicked and asked if it was Patty or Selma? I reassured them that no, we were not eating Patty & Selma, this chicken came from the grocery store!
