Blueberry Upside Down Cake
As promised, and here is the recipe:
8oz Fresh Blueberries
2 Tablespoons Flour
1/8 cup Sugar
1 1/3cups Flour
2/3cups Sugar
2 teaspoons baking powder
2/3cup milk
1/4cup softened butter
1 egg
1 teaspoon vanilla
1/4cup blueberries
Grease and flour a 9×1.5 inch round pan. Mix blueberries, 2 T of flour and 1/8cup sugar, spread into the baking pan. Mix the rest of the ingredients in the order listed. Add the final 1/4cup of blueberries and mix by hand, just folding them into the batter (if you mix too hard they will burst and turn your batter purple). Pour batter into baking pan and spread evenly.
bake for 30-40min at 350. Cool on wire rack for 5 min then invert cake pan onto a plate. Cool another 20 min and serve!
