Apricot Scones

Traveling for over 2 weeks really made me miss my own kitchen.  I ate one too many turkey and cheese sandwiches out of the back of the van.  When we first got home I was anxious to get the the grocery store so I could purchase all sorts of foods to make for my family- sweet sweet variety!

For the scones I used this recipe from BHG, but added 3 apricots cut into 1″ pieces instead of currants.  Served with fresh fruit, left over from our dinner of fruit and cottage cheese (one of my favorite summer dinners, the kids love it too).
